Summer Salad With BRAND’S® Vinaigrette


1/3 cup olive oil
1 clove garlic, crushed
2 tablespoons lemon juice
1 jar BRAND’S® Essence of Chicken with American Ginseng
Freshly ground salt and pepper to taste

Salad
300g(11oz) smoked or cooked boneless chicken
2 cups assorted baby salad leaves
1 apple peeled, cored and diced
1 avocado, halved, stoned, peeled and diced

Method:

  1. Whisk all the ingredients for the dressing and refrigerate until ready to use.
  2. Slice the chicken and combine with the salad leaves. Carefully combine the apple avocado and toss with the vinaigrette. Spoon over the chicken. Serve with the remaining vinaigrette.
  3. Serves 4
